Chili sin Carne

It’s so so cold in St. Moritz! This is a perfect winter warmup meal.

serves 4

Ingredients:
2-3 garlic cloves, minced
2 onions, chopped
1-2 carrots, finely diced
1 red bell pepper, finely diced
120g soy granules
400ml vegetable broth
2-3 Tbsp olive oil
1 tsp chili powder
2 tsp smoked paprika
1 x 400g can chopped tomatoes
200g tomato passata
3 1/2 Tbsp tomato paste
3 Tbsp tamari
125g cooked kidney beans (1/2 can)
125g cooked black beans (1/2 can)
270g corn
Cayenne pepper, to taste
Salt & pepper, to taste

Method:
Add hot vegetable broth to soy granules. Let it soak 5-10 minutes, until soft.
Drain soy granules. Save broth.

Heat oil in pan. Sauté onions, carrots, and red peppers until soft.
Add garlic, chili, paprika, and tomato paste. Sauté for 1-2 minutes>
Add chopped tomatoes, pasta, reserved vegetable broth, bean, corn, salt, pepper, cayenne, and Tamara.
Bring to a simmer in low heat. Let cook for 30 minutes.
Taste and season accordingly

Serve with avocado, coriander, and a squeeze of lime
