Cornelia's Granola
I love granola. There is nothing better with yogurt. I also eat it as a snack and, sometimes even, as a topping for nice cream. This recipe is inspired by one of my clients. She helped me refine it to the deliciousness that it is now.
Ingredients:
3 cups rolled oats
1 Tbsp chia seeds
1 Tbsp hemp seeds
1 Tbsp ground flax seeds
1 cup macadamia nuts (I cut mine in half)
1 cup blanched almonds
1 cup unsweetened coconut chips
1 cup dried cranberries
1/2 tsp sea salt
1/4 tsp nutmeg
1/3 cup coconut oil (melted)
2/3 cup maple syrup
1 Tbsp vanilla extract
Method:
Pre-heat oven to 150c (300F). Line a baking sheet with parchment paper, silicone, etc.
Add all dry ingredients, except for the cranberries, to a bowl and mix until well combined. Set aside.
Combine melted coconut oil, maple syrup, and vanilla in separate bowl.
Pour wet ingredients into the dry ingredients and mix until all is coated.
Spread mixture onto prepared baking sheet to an even layer.
Bake for 30-40 minutes mixing every 15 minutes to ensure even baking.
Remove oven. Take a spatula and move the mixture around to let heat escape. Then press down mixture and allow it to cool down completely.
After cooled, store in an airtight container.
