Oh so good Falafels
I love falafels. In the supermarket you can buy falafel kits but DO NOT do that. Make these instead.
Ingredients:
1 cup dried chickpeas, soaked overnight. (do not use canned chickpeas
½ cup onion, roughly chopped
1 cup chopped parsley
1 cup chopped cilantro (coriander)
¼ tsp small green chili pepper (serrano or jalapeño)
2 garlic cloves, minced
1 tsp cumin1 tsp sea salt
½ tsp ground cardamom
¼ tsp black pepper
¼ cup chickpea flour
Avocado oil for frying
Method:
Soak the chickpeas overnight in a medium bowl. Make sure to cover the chickpeas by 2-3 inches.
Drain and rinse the chickpeas.
Put chickpeas, onion, parsley, cilantro, chili pepper, garlic cumin, salt, cardamom, and black pepper in the food processor. Pulse several times until the mix looks like coarse sand.
Transfer the mix to a bowl. Cover and chill the mixture at least 30 minutes.
Use a tablespoon, falafel scoop or ice cream scoop to form the falafel balls.
To cook in fan oven:
Heat to 400f (200c).
Prepare a baking sheet with baking paper or silicone sheet. Lightly pray the baking paper with oil.
Place the falafel pieces. Make sure not to crown the pan. Spray the top of the falafels as well.
Bake for 5-7 minutes. Carefully flip the falafel and bake for another 5-7 minutes.
To deep fry:
Add about 3in. oil to a deep pot on medium heat. Heal oil to 350f (176c).
Cook the falafel in batches for 1-2 minutes until golden.
Remove from pot and put on kitchen towel/paper lined plate.
Note:
If the mixture is too wet, add more chickpea flour. If the mixture is too dry and crumbly and doesn’t make nice balls, add a teaspoon or two of water.
