Vegan Rye Soda Bread

This bread is delicious! I veganized the recipe from a Jamie Oliver book. I came out perfectly.
Makes 1 loaf.

Ingredients:
250g whole wheat spelt flour
100g rye flour
50g oats
1 tsp baking soda
1 tsp salt
1 chia egg
300 ml coconut yogurt

Method:
Heat oven to 190c
Prepare chia egg (1 Tbsp chia seeds & 2.5 Tbsp water mixed and set aside)
Mix dry ingredients. Mix chia with coconut yogurt.
Add chia mixture to dry ingredients with a fork. Mix until it starts looking like a dough.
Lightly flour your hands. Bring dough together and shape like a round loaf (about 3cm deep).
Place dough in lightly floured baking tray. Dust the top of loaf with flour.
Add oats and chia seeds to the top. Use knife to cut a shallow cross on top of the bread.
Bake for 40-45 minutes or until it sound hollow when you knock on the center bottom.
Cool slightly on wire rack. Serve warm
